Ingredients

    4 cans S&W canned tomato-Sodium Free DRAINED
    6 garlic cloves, peeled
    10-12 basil leaves
    2 cups fresh spinach
    2lbs lean ground turkey
    salt/pepper/garlic salt if you choose
    4 celery stalks
    2 carrots
    2 zucchini
    2 Medium Green Bell Peppers
    7-10 Mushrooms
    1 jalapeno (i remove seeds)
    1 Yellow Onion

    1 large can tomato paste or small cans

    Feel free to leave some veggies off if allergic or such

    I also have made with adding Black Beans/Corn/Green Beans/ Yellow Squash/Brocolli...mix and match and see what works for you!

Tips

I make a big batch on purpose. We use half first night. Then I freeze the 2nd half in a freezer bag, and use within 2 weeks usually. When you use frozen one all you have to do is stick in crockpot on low until fully heated :-) You can use this for spaghetti, lasagne, lasagne roll ups, or anything else you would use a meat spaghetti sauce for!


Directions

I keep all skins on veggies, but trim off ends/stems etc. Brown the ground turkey, add to crockpot. Season as you prefer, I use garlic salt. Blend/food process ingredients, I do it in batches. I do canned tomato, basil, garlic, spinach in the blender. Add to crockpot. Then in food processor I do all the veggies in batches (depending on your food processor size), add to crockpot as you go. I process them down to almost liquid because my family "hates" veggies so they can't see them. You do not have to process down that much if you want it kind of chunky! I add 1 large jar or 2 small jars of Tomato paste to crockpot also to it thickens a bit. Leave it in the crockpot sometimes all day sometimes only 4 hours. Either way it's cooked and yummy! I cook it on low, you can even cook on low 3-4 hours then keep on warm until ready to eat if you choose.
