Ingredients

    1 T. Olive oil
    3 boneless, skinless chicken breasts
    3 shallots, sliced thinly
    1/2 cup Pinot Noir
    1 cup low-sodium chicken broth
    3 T. balsamic vinegar
    2 T. apricot or cherry jam
    1/2 cup canned cherries in water

Directions

Heat olive oil in skillet. Salt and pepper chicken. Add chicken to skillet and sear without turning until brown on one side. Turn chicken over and brown second side. Remove chicken to plate and cover. Add shallots to skillet and lower heat until shallots are translucent. Add wine and scrape skillet. Add broth and vinegar. Bring to a boil and reduce by 1/2. Add cherries and chicken and heat through.
