Introduction

Ingredients

    ½ cup mashed banana
    ½ cup milk (2%)
    2 tbsp lemon juice
    3 tbsp olive oil
    1 large egg
    1tsp pure vanilla extract
    5 tbsp Krisda Baking Formula
    1 cup whole what flour
    ¼ cup almond flour/meal
    1.5 tbsp Manitoba Harvert Hemp Protein Powder
    ¾ tsp baking powder
    ½ tsp baking soda
    1/2 cup hazelnuts, chopped

Tips

Feel free to use your choice of sweetener, protein powder or nuts, noting the nutritional info will be different from the original recipe.


Directions

Place hazelnuts on cookie sheet. Toast in oven preheated to 325 F, for 8-10 mins, or until golden and fragrant. Let cool, and chop.

Line muffin tin with muffin cups.

In small bowl, add lemon juice to milk. Set aside.

In a large bowl mix together: banana, milk mixture, oil, egg, vanilla, and Krisda Baking Formula.

In a separate bowl, mix together flour, protein powder, cinnamon, baking powder and baking soda. Add to wet ingredients and mix until combined.

Fold in hazelnuts.

Spoon into muffin tins.

Bake on 325 degrees F for approx. 25 minutes or until a toothpick inserted in the center comes out clean.

Remove from pans and cool completely

Serving Size: makes 12 muffins
