Ingredients

    Sweet Texas Caviar:
    1 cup apple cider vinegar
    1/4 cup olive oil
    1/4 cup vegetable oil
    1 cup splenda
    1 can (15.5 oz.) Goya black beans
    1 can (15.5 oz.) Goya black-eyed peas
    1 can mexicorn
    1 small jar chopped pimentos
    1/2 red onion chopped
    1/2 green bell pepper chopped
    2 celery stalks chopped


    Hot Chili Turkey Burgers:
    1lb ground turkey 93% lean
    1 egg white
    1/4 cup of plain brad crumbs
    3/4 cup of chopped jalapeno peppers (jarred)
    1 tsp salt
    1 tbs garlic
    1 tbs hot red pepper (i used jarred chili garlic)
    3/4 cup sharp cheddar cheese shredded

Tips

Make the bean salad a few hours in advance or the night before. It tastes best when it's given time to marinate in the dressing!

I also serve the bean salad with a slotted spoon - this way you're draining off the excess oil & vinegar - which is mostly what contributes to the fat content in the nutrition data for this recipe.

Directions

Sweet Texas Caviar:
In a small sauce pan, combine cider vinegar, olive oil, vegetable oil and splenda; cook over low heat until splenda dissolves and mixture comes to a boil. Remove the dressing from heat and set aside.

Drain and rinse beans and corn, then combine with all remaining salad ingredients in a large Tupperware container. Drench with oil/ cider vinegar dressing and toss to mix all ingredients. Allow to marinate in the refrigerator for a minimum of 2 hours.

Hot Chili Turkey Burgers:
Combine ground turkey breast, bread crumbs, egg white, hot peppers, salt and garlic and cheese in a large bowl. Kneed together thoroughly, then form into patties.

Grill or fry turkey burgers until thoroughly cooked through.

Top burgers with fat free sour cream (not included in nutrition facts)
