Number of Servings: 10

Ingredients

    1 cup real Mayonaise (regular or reduced)
    1/4 cup Dijon Mustard
    2 TBLS fresh squeezed lime juice
    1 medium tomato, chopped
    1/2 jalapeno, finely chopped
    2 whole scallions, chopped
    1/2 red onion, chopped
    1/2 tsp cayenne pepper
    1 small garlic clove, minced
    salt and fresh ground pepper to taste
    16 new potatoes, cooked, drained and sliced 1/2 inch thick



Directions

Cook new potatoes leaving skin on. While potatoes are cooking combine the rest of the ingredients. Cool sliced potatoes and add to mixture and refrigerate for one hour.

Serving Size: makes 10 (1/2 cup servings)
