Ingredients

    15 medium potatoes - Yukon Gold (yellow)
    1 onion, minced
    1 tsp mustard
    1 tsp vegetable broth bouillon
    vinegar to taste
    warm water to taste
    2 tsp salt
    oil to taste
    1 tomato
    2 tbsp parsley
    1 boiled egg

Tips

the temptation will be to peel the potatoes and then boil them. However, they are easier to grate if they are boiled in the skin and peeled once cool.


Directions

boil potatoes in the jackets in salt water until tender. Pour out water and put potatoes on the counter to cool. When cool, peel potatoes and use narrow grater, grating the potatoes into a large serving bowl. In a separate bowl mix together warm water, vinegar, onion, mustard, salt and bouillon cube. let sit until onion softens and bouillon has dissolved. mix everything together well and taste. 1/2 an hour before serving, warm up the dressing and pour over the potatoes. Mix well. right before serving pour 2 tbsp of oil over the salad and mix gently.
Slice hard boiled egg, and decorate the salad with the egg and parsley.
