Ingredients

1/2 tsp olive oil
3 oz skinless boneless Chicken Breast
1/4 cup chopped red pepper
2 Tbsp salsa
1 Tbsp water
1/4 tsp Southwest Chipotle Mrs. Dash
2 tsp Fajita seasoning mix
1/4 Cup Kraft Shredded Mexican cheese blend
1 Whole Wheat Tortilla
Dollop of sour cream
Tips
In the recipe I used Presidents choice corn and black bean salsa and President's Choice Blue menu Whole Wheat & Flax Tortilla
Directions
1. Heat skillet on medium. Add the oil and peppers. Cook until softened; add in chicken. Cook until chicken is done.
2. Add in the salsa, water, and seasonings. Continue to cook until thickened.
3. Preheat oven to 350F. Place tortilla on baking sheet and spread cheese over top. Spoon the chicken mix on half of the tortilla. Place in oven and cook until cheese is melted.
4. Fold over and cook an additional 2 - 3 minutes.
5. When done, place on plate and cut into 3rds. Serve with a dollop of Sour cream.
