Ingredients

    1.25 lbs. Lean Ground Turkey
    1 Med. yellow onion, chopped
    1 C diced yellow, red or green bell pepper (approx 1
    med pepper)
    1T chili powder
    1t ground cumin
    1t ground mustard
    1t oregano
    Red Chile Flakes (optional - to taste)
    1.5 Black Beans (cooked) or kidney beans -
    (15-ounce can, rinsed & drained)
    1 (10-ounce) package frozen spinach, thawed -or-
    10C fresh baby spinach
    Cilantro (to taste)

Tips

You can also cook the turkey and cook the onion and peppers separately and add the peppers/onions to the cooked turkey.


Directions

Coat a large nonstick skillet or dutch oven with cooking spray. Add ground turkey, onion and bell pepper and simmer for about 5 minutes, until just cooked through.
Add the chili powder, cumin, mustard, oregano and chile flakes (if desired). Stir well. Add the beans and spinach and cook just until heated through. Season t taste.
Garnish with cilantro.

Serving Size: makes 8 1-cup servings
