Introduction

Number of Servings: 4

Ingredients

    apx 4 cups red leaf lettuce or any other kind you prefer
    3 chicken breasts, skinless and boneless. Grilled (1.3 lbs apx)
    6 hard boiled eggs
    1-2 fuji apples
    green onions chopped
    2 tbs extra virgin cold pressed olive oil
    balsamic vinaigrette (raspberry or pomegranate is best)
    3 tbs real maple syrup, the kind from trees in vermont or NY not the Mrs Buttersworth.
    Poppy seeds
    almond slivers or walnuts or pecans


    Add anything extra you might like or try strawberries in place of apples.

Tips

When hard boiling eggs, always use the oldest eggs in the fridge, when they are done boiling, place them in an ice bath for a few minutes, they will peel right off!

I like to keep a few on hand to save time, you can make extra chicken and potatoes too for more salad the next day.


Directions

Boil 6 eggs and two medium red or yellow potatoes. When done set aside and put in fridge to chill.
While boiling, marinade chicken how you want for just a few minutes, fire up grill, grill and set aside, do not cut it up. You can chill it or leave it to set and soak in its juices.

Wisk together 3tbs maple syrup, 1tbs balsamic vinegar, 3 tbs olive oil, you can change this to your personal taste, add poppy seeds and a dash of sea salt if you want it saltier.

plate lettuce, eggs, wedge the potato and slice the eggs, pile on sliced apples, slivered almonds, green onions and of course add any other veggie you prefer.

Top with the chicken and pour dressing over it. Delish!
