Introduction
I didn't have all the ingredients for any one recipe, so I made up my own based on what I had in my kitchen. I would suggest using low fat versions of the sour cream and cheese and adding black beans in addition to the chicken or alone for a vegetarian meal. Ingredients

2 c. chicken, cooked and shredded
1/2 c. sour cream (fat free can be substituted)
1/2 container of Santa Fe Philadelphia Cooking Cream (or full container)
1 1/2 c. shredded cheese (mozzarella, cheddar, mexican, etc.)
1 14oz can diced tomatoes with green chilies
1 c. chopped onions, sauteed
3-4 cloves of garlic, sauteed
6-10 tortillas, depending on size
Directions
Boil and shred chicken
Mix sour cream, cooking cream, 2/3 c. shredded cheese, chicken, tomatoes and sauteed onion and garlic in a boil
Evenly divide mixture between tortillas
Wrap tortillas around mixture and place w/ seams down in a 9x13in pan sprayed with cooking spray
Top tortillas with remaining cheese
Cover with foil and bake for 20-30 min. at 350
Serving Size: Makes 5-6 servings
