Ingredients

    Olive Oil, 1.5 tsp
    Onions, raw, .5 large (chopped)
    Carrots, raw, 1 large (chopped)
    Garlic, 5 cloves (chopped)
    Tomato Paste, 1 can (6 oz)
    Crushed Tomatoes, 790 grams (1 large can)
    Spinach, fresh, 3 cup
    Serrano Peppers, 4 pepper
    Beans, black, 1700 grams (4-15 oz cans), drained

Tips

You can top with sour cream, cheese, or green onions.


Directions

Saute onions and carrots in olive oil until the onions become translucent. Next add the following ingredients and stir before adding the next one: tomato paste, garlic, crushed tomatoes, spinach, serrano peppers, and 2 cans black beans cook on low-medium for approximately 1/2 hour. Remove from stove, use a stick blender to puree ingredients. Return to stove, add remaining 2 cans of black beans. Cook for 30 - 40 minutes to achieve desired consistency. Let cool 10-15 minutes, Season to taste salt and pepper, and enjoy!!!
