Introduction

I was looking for a good breakfast that had a good amount of animal protein, veggies, and some carbs that was under 400 cals. I came up with this. You could easily heat this up in the morning on the go. I think I will also try this with fresh peppers instead of broccoli to change it up sometimes.

FYI this does suggest refrigerating over night or at least 8 hours.

Ingredients

    Turkey, Ground turkey, 93% lean, 16 oz (1 Ib.)
    Broccoli, cooked, 3/4 cup, chopped
    Onions, raw, 1/2 cup, chopped
    Butter, unsalted, 1.5 tbsp
    Bread, whole wheat
    Kraft Shredded 2% Mexican Four Cheese blend, 1 cup
    WeightWatchers Mexican 3 cheese shredded, 1 cup
    Egg, fresh, 6 large
    Milk, 1%, 1 cup
    Whole Milk / Vitamin D, 1 cup
    SeaSalt (All Natural), 1 tsp
    Dry mustard or Mustard Powder, 1 tsp

Tips

The broccoli, onion and butter is optional, but they are included in the calories because this is how I like it.


Directions

1. Place sausage in a large, deep skillet. Cook over medium-high heat until evenly brown. Drain, and set aside.
2. Cook & chop broccoli, set aside.
3. lightly carmalize onion in 1 Tbl butter.
4. Layer bread cubes, sausage, veggies, and Cheddar cheese in a greased (1/2 Tbl butter) 8x11.5 inch baking dish. In a bowl, beat together the eggs, milk, salt, and mustard. Pour the egg mixture over the bread cube mixture. Cover, and refrigerate at least 8 hours or overnight.
5. Remove the casserole from the refrigerator 30 minutes before baking. Preheat oven to 350 degrees F (175 degrees C).
6. Bake 50 to 60 minutes in the preheated oven, or until a knife inserted in the center comes out clean. Let stand 10 minutes before serving.
