Introduction

sugar free and fat free - quite good all things considered sugar free and fat free - quite good all things considered
Number of Servings: 24

Ingredients

    4-5 overripe banana
    1 cup prune puree or applesauce
    2 eggs
    1 cup white flour
    1/2 cup bran
    1/2 c. oat meal
    1 t. baking powder
    1/2 t. soda
    1/4 t. salt
    1 t. cinnamon
    1 cup coarsely chopped walnuts (optional)

Directions

In a blender put:
banana, applesauce, 2 eggs
blend until smooth
In a bowl mix:
Dry ingredients
Fold the puree from the blender into the dry ingredients and mix until just mixed. Don't overmix.
Put into greased muffin tins and bake at 350 for about 20 min or until done.
