We try to avoid pasta-based meals when possible, so I usually substitute either peppers and onions or zucchini and broccoli. This is a no-frills, not at all fancy, simple meal of center cut pork chops, peppers and onions, with a cream of mushroom and chicken broth sauce. Ingredients

    3 Pork chops (center cut, 4 oz)
    1 20 oz bag frozen peppers and onions (Berkley & Jensen from BJ's)
    1 12 oz can Healthy Request Cream of Mushroom soup
    1 1/2 C low sodium chicken broth
    Seasoned to taste (garlic powder, onion powder, Mrs. Dash)
    3 second spray of olive oil

Directions

Do a 3-second spray of olive oil in the bottom of your crock pot
Empty the bag of peppers and onions into the bottom of the crock pot
Top with 3 center cut pork chops (chicken or even a roast would also work) - I use frozen
Top with can of Cream of Mushroom soup
Pour 1 1/2 C low sodium chicken broth over everything
Add seasoning now, or wait until it's all cooked

Set on low for 6-8 hours, making sure the chops are cooked through
