Ingredients

    Cream of Wheat Cereal 3 tbsp
    Vanilla Extract, .5 tsp
    Splenda, 2 tsp (to taste)
    Dried Cherries, .25 cup (40 g)
    Water, tap, .5 cup
    Milk, canned, evaporated, .25 cup (I use regular whole milk to add a creamy texture, but evaporated skim milk would work too)

Directions

In a large, microwavable bowl with microwave-safe, vented lid (I use Tupperware Rock-n-Serve), mix 3 Tablespoons of dry cream of wheat with half a cup of water and 1/4 cup of evaporated milk. Cook for 1 minute then stir well with a fork. Cook in additional 30 seconds intervals, stirring between each time, until desired thickness is reached. (Cereal with thicken as it cools.) Stir in splenda to taste and 1/2 t. vanilla extract. Stir in 40 g (weight is far more accurate than volume with dried fruit) of dried cherries, or your favorite dried fruit.
