Ingredients

    1 lb ground turkey
    1 onion, diced
    2 carrots, chopped
    3 stalks celery, chopped
    2 cloves garlic, minced
    2 14.5 oz cans diced tomatoes
    1 15 oz can red kidney beans w/liquid
    1 15 oz can white or black beans, w/liquid
    1 15 oz can tomato sauce
    1 12oz can V8 juice
    1 T white vinegar
    1.5 t salt
    1 t oregano
    1 t basil
    0.5 t pepper
    0.5 t thyme
    1/2 lb whole wheat elbow pasta

Directions

Brown the ground turkey in large sauce pan over med. heat. Drain off most of the fat. Add onion, carrots, celery, garlic and saute for 10 min. Add remaining ingredients, except pasta, and simmer for 1 hour. About 50 minutes into simmer time cook pasta for 10 min and drain. Add pasta to the pot of soup. Simmer for 5-10 minutes and serve.
