Ingredients

    2 tsp lime zest
    3 TBS lime juice (about 1 lime's worth)
    3 TBS olive oil
    1/2 tsp sugar
    1/2 tsp salt
    1/4 tsp pepper
    1 c quinoa (uncooked)
    2 c black beans
    2 medium tomatoes, diced
    4 green onions, chopped
    1/4 c fresh cilantro, chopped

Directions

Whisk together lime zest and juice, oil, sugar, salt, and pepper in a large bowl.
Wash quinoa in 3 changes of cold water in a bowl, draining it in a sieve each time (not necessary if you bought already-washed quinoa).
Cook quinoa in a medium pot of boiling salted water, uncovered, until almost tender, about 10 minutes. Drain in sieve, then set sieve in same pot with 1" of simmering water (water should not touch bottom of sieve). Cover quinoa with kitchen towel, then cover sieve with a lid and steam over medium heat until tender, fluffy, and dry, about 10 minutes. Remove pot from heat and remove lid. Let stand, still covered with towel, 5 minutes. (Alternatively, you can buy Ancient Harvest quinoa, which is already washed and has easier cooking instructions.)
Add quinoa to dressing and toss until dressing is absorbed, then add other ingredients. Salt and pepper to taste.
