Introduction

I needed a healthier recipe for fish and started looking at pictures and recipes on line, tossed a couple of ideas together and came up with this. A delicious, easy to fix, fish dish. Enjoy! Ingredients

    Cod, two fillets
    1 can of diced tomatoes -or- 3-4 lg. freshly diced toms.
    1/4 diced onion
    3 cloves of garlic, diced
    2 teaspoon's of capers, drained
    10- 14 kalamata olives drained and sliced
    juice from the Mezzetta olive jar
    1 teaspoon, or more, of crushed red pepper
    noodles of choice, 2 oz per person.


Tips

The Mezzetta olives have an excellent mix that they have marinated in and I do use this juice to help flavor the dish...highly recommended. And the fish can be fresh or thawed...and any white fish could work, but the cod works very well.


Directions

Preheat oven to 400.
Prepare pasta water.

Pam a skillet, preferably one that may also be placed in the oven - if you do not have one (stainless steal or cast iron) have a cooking dish ready to place in the oven.

add the onion and let the saute a couple of minutes to slightly loosen up.
add the garlic and give it a minute
add the crushed red peppers and give them a minute
add the tomatoes, capers, sliced olives, stir everything together and let it bubble up a bit
add a good splash of the juice from the olive jar.
taste
if you want a little pepper or salt add it now, more peppers, capers, juice from olive...this is the time to adjust flavor.

This is going to be runny - this is good, the sauce will be yummy!

When this has simmered for a few minutes take it off the heat. Place the fish in the center of the tomato sauce and lightly cover with the tomato mix.

Place in the oven and bake for 15 minutes.

During this time boil the pasta for the dish.

Once done place the pasta on a dish, place the fish on top of the pasta, and top with the tomato mixture.
