Ingredients

3 medium onions, diced
8 8" stalks celery, diced
20 baby carrots
1lb. lean ground beef
1 10 oz can Cream of Mushroom soup
other seasonings to taste: pepper, garlic powder, creole seasoning, onion soup mix, etc.
4 cubes/cups beef bullion prepared with water
Directions
Crumble raw ground beef into the bottom of the crock pot, then layer carrots, celery, and onions. Add seasonings and just cover with beef bullion. Cook on low for 8 hours or high for 4 hours. Scoop out as much of the bullion as possible, then stir in the cream of mushroom soup. Cook on high for 30 minutes. Serves 10 (5 for one night, 5 for the next night's Shepherd's Pie). The Nutritional Info for this recipe is only for the first night's dinner. I like to pair this with rice for the first night.
Shepherd's Pie: Use a larger dish than you think you'll need! You can make the mashed potato layer as thick or thin as you need it. Drain as much water as possible off the leftovers, then make a bottom layer in a casserole dish. Top with instant mashed potatoes. Bake for 30-45 minutes at 350 degrees to heat throughout. Top with shredded cheese and allow to melt before serving.
