Ingredients

    2 medium eggplant (about 2 lbs.) sliced 1/4"
    6 medium tomatoes slice 1/4"
    1 tsp salt
    1/4 tsp pepper
    2 Tbs onion powder
    2 Tbsp garlic - minced
    2 Tbsp basil or Italian Herbs
    can top with parmesan cheese and even red spaghetti sauce

Tips

If you let the ingredients sit for a while the eggplant absorbs the juice of the tomato and ends up being very flavorful.


Directions

Put all ingredients in a ziplock bag and shake until well blended. Spread ingredients on a prepared baking pan, bake for 35 to 45 minutes
