Ingredients

    2 c baby spinach (bagged, organic, Trader Joe's)
    1/2 c low fat cottage cheese (Trader Joe's)
    1 c grape tomatoes (organic, Trader Joe's)
    dash Cayenne pepper
    dash Garlic granules
    dash Onion powder
    dash Lemon Pepper, optional

Tips

Pine nuts or chopped walnuts would be good in this, too, & would provide a "good" fat, but are not included in the nutritional information.


Directions

In a medium mixing bowl, mix cottage cheese & spices until well blended. Then gently fold in tomatoes. Place spinach (may chop into smaller pieces, if desired) in a medium salad bowl. May dot cottage cheese mixture on top of spinach, or as I do, just mound cottage cheese mixture in center of spinach. May sprinkle with more cayenne, if desired.
