    3/4 cups dry quinoa, (rinsed, drained and then cooked
    in 3/4 cup vegetable broth and 3/4 cup water)
    1 cup Veggies of your choice
    dash of salt
    dash of pepper
    1 tsp garlic powder
    1 large egg
    1 cup milk
    3/4 cup grated Cheddar cheese
    1/4 cup panko bread crumbs


Lightly sauté or steam any veggies you would like in this dish. I steamed broccoli and then chopped it up.
Cook quinoa with water and vegatable broth to package instructions until fully cooked. (About 15 minutes)

Preheat oven to 350 F. Coat 8 X 8 inch dish. Whisk together egg and milk in large bowl. Fold in quinoa and cheese. Stir very well and let some of the cheese melt. Then fold in veggies and garlic powder. You also may want to add some salt and pepper at this point to your taste. Transfer mixture to prepared baking dish and if using Panko Crumbs or Bread crumbs add now and bake 30-35 mins, until bread crumbs are browned.

  • I'm totally digging this idea! I have some left over quinoa sitting in the fridge with nothing to do and I'm thinking it's gonna become mac n' cheese now. Thanks for this!

    The 8 x 8 pan make four serving, each about 2 x 2 inches.
