Ingredients

Chicken breast meat
Egg Roll Wraps (find in your grocery store near tofu)
Blue cheese (may substitute mozzarella)
Buffalo sauce
Broccoli slaw
Raw carrots, celery, sugar snap peas & dressing on the side - optional. (Not counted in nutritional info per serving.)
Tips
If you'd like, you can mix the buffalo sauce and chicken in advance. Adding the buffalo sauce on each allows you to use more or less sauce in case you have family members who like more or less spice.
These reheat in the oven fairly well. Would not recommend microwave reheating.
Directions
Boil the chicken breast and let it cool. Pull it apart, so that it is in small pieces.
On a clean working surface, spread out your egg roll wraps. Place a pinch of slaw, ~.75 oz chicken, 1 tbsp buffalo sauce and .25 ounces of cheese on each. Roll up egg roll style. Don't overfill the wraps - or the fillings will tear thru the wrap.
Place a baking rack on a cookie sheet (allows the wraps to cook on top & bottom without turning) and bake at 400 for 12 minutes.
