Number of Servings: 5

Ingredients

    1 avocado, diced
    1 cup, canned black beans drained
    1 cup, corn drained
    1 cup petite diced tomatoes, in juices
    1 bunch cilantro, diced
    1 red onion, diced
    4 tsp, minced garlic
    1 jalapeno pepper, diced with seeds
    Juice of 1-2 limes
    1 cup cooked chicken breast

Tips

Can use shrimp instead of chicken, leave out pepper if too hot.


Directions

combine all ingredients.

    The title of this recipe says Quinoa, but there is no quinoa listed in the ingredients. I am interested in trying this recipe but would like to know how much quinoa to use. - 1/12/14
