Ingredients

    2 cans black beans, rinsed and drained
    1 3/4 to 2 c of chicken broth
    3 to 4 cloves of garlic, minced
    1 jalepeno pepper, seeded and diced
    1/2 tsp ground cumin
    juice of 1 lime
    cilantro for garnish

Tips

Can easily be turned into a vegetarian dish by substituting vegetable broth.

Add a chopped up onion for a twist.

Adjust heat and spices by more or less jalepenos and adding a spoon of "Creole Seasoning" or some of your favorite spices.


Directions

Warm oil in pan over med high heat, add diced jalepeno and garlic, saute until soft, about 5 minutes. Add beans and broth and bring to boil. Boil approximately 5 minutes. Turn down heat to med-low and use potato masher to coarsely mash beans. Cook on Med Low until liquid is boiled off and desired consistency is reached, 15 to 20 minutes. Squeeze lime juice over beans and mix, garnish with cilantro.
