Ingredients

    White Rice, long grain, 1 cup
    *Tomatoes, red, ripe, raw, year round average, .5 cup, mashed
    Onions, raw, .33 cup, chopped
    Garlic, 1 clove
    Olive Oil, 1 tbsp
    Chili powder, 2 tsp
    1.75 Cups Chicken Stock

Tips

Diced green bell pepper is also nice in this dish. . Serve with diced avocado on top.


Directions

chop onions and mince garlic. Add oil to cooking vessel and saute onions and garlic. Add rice and cook until translucent. Add tomatoes, chili powder, and chicken broth. Bring to a boil, lower heat and simmer, covered, for 40 minutes.
