Introduction
I have never made what I considered a "good" meatloaf until I made this one. While unconventional, this meatloaf is moist, delicious and satisfying! Ingredients

3 TBSP Chunky Salsa
1 Egg White or 1/4 cup egg substitute
1 Packet Taco Seasoning Mix
1/4 c. Plain Bread Crumbs
1/2 c. Skim Milk
1 lb. Ground Chicken
Tips
Serve cold leftovers crumbled over a salad and top with fat free sour cream and more salsa for a delicious taco salad!
Directions
1. Preheat oven to 350 degrees.
2. Stir the first 5 ingredients together in a large bowl, let sit 5 minutes.
3. Add ground chicken, mix thoroughly.
4. Press mixture into a loaf pan lined with aluminum foil.
5. Bake for 1 hour or until the internal temperature reaches 180 degrees.
Serving Size: Makes 4 Servings

This was very easy to put together, and came out really delicious!! I loved it and will definitely make again. Mine had a lot of liquid on top when it first came out of the oven, but it soaked back in after it sat for 10 min or so. I'd recommend letting it stand a few minutes before taking it ou - 4/13/17
