Ingredients


    15oz can of Pinto beans
    10oz can of canned chicken
    10oz can of cream of chicken soup
    10oz can of Rotel (diced tomatoes and green chiles) DRAINED!!!
    5 Tortillas
    diced cheese for the inside of each burrito (I chose swiss)

    shredded cheese to sprinkle over burritos

    10oz can of Enchilada sauce

Tips

It's SUPER EASY to make this recipe Low-fat, Low-sodium, and definitely a lot lower in calories. I used what I had in my pantry and it came out great. Think of this as a canvas. You can add or subtract anything you like. It's mild in terms of spiciness since I have kids. You may want to add some diced onion or roasted jalapenos to make it a little less...canned. Without coupons and sales this comes out to about $2.60 per burrito. I had coupons and sales for everything so it only came out to .90 cents per. Plus if you make everything homemade it's way cheaper you can get away with .20 cents per burrito.


Directions

Preheat oven to 350
Mix the can of Beans, Chicken, Soup, and drained Rotel.
Spread in the tortillas and sprinkle diced cheese inside. Roll up and place next to each other in a deep baking dish.
Sprinkle shredded cheese over and pour enchilada sauce over that.

Bake 15-20 minutes or until cheese is melty and the burritos and sauce inside are warm
