Ingredients

    1 cup grated carrots
    1 cup chopped onion
    1/2 cup chopped celery
    1/2 medium head of cabbage chopped
    1 cup green beans
    mushrooms fresh 2 large chopped
    petite cut diced tomatoes with sauce 3.5 cups
    2 cups black beans
    soba noodles 1 1/2 cups
    chicken or veggie broth low sodium 8 cups
    oregano 1 T
    nutritional yeast 2 T
    2.5 T olive oil
    1 Tsp ground red pepper

Tips

You may use any veggies or beans or substitute other lean proteins in place of the beans or mix up a few different kinds of protein if desired.

You may also make in crock pot and let simmer all day.
May garnish with any other spices you like


Directions

In a large pot 2 1/2 T olive oil.. add veggies and saute about 5 minutes.

Add your broth and uncooked noodles and oregano and nutritional yeast.Bring to boil..boil for about 10 minutes.

Add your beans .. simmer to desired consistency.

Serving Size: makes about 12 -1 cup servings
