Introduction

Number of Servings: 4

Ingredients

    1 lb. Boneless/Skinless Chicken Breast
    1 Knorr Chicken Bouillon Cubes (1 cube) these are high in sodium, use a less sodium version if this is a concern.
    2 TBSP Cumin Powder
    1/2 tsp Nutmeg
    4 Garlic Cloves Minced
    1 Medium White Onions cut in half and sliced in thin moons
    1/2 cup Cilantro, washed do not chop.
    12 Corn Tortillas 3 per serving.
    2 Limes cut into wedges.

    This is a healthy alternative full of flavor. Keep in mind, that what we ADD to this is where we find the calories. Cheese or Sour Cream will not be missed in this flavorful recipe. For toppings use Pico De Gallo or some Texas Caviar. Either one will add that zing that you are looking for! Also squeeze fresh lime wedges on top....

Tips

Because we are using a Crockpot, we will NOT saute the chicken and onion/garlic in Oil prior to cooking!!!!

Due to Chicken Bouillon Cubes being high in sodium, I do not recommend adding more salt during cooking. If sodium is a concern, select the variety that has lower sodium or substitute 1/2 cup canned low sodium broth. I choose to use the bouillon because it keeps the traditional flavor we are looking for.


Directions

Add just enough water to the slow cooker to cover the bottom. The chicken will produce a rich broth while cooking. Add Bouillon, Cumin, Nutmeg, and Garlic, to the water at the bottom of the cockpot

Layer Chicken in Crockpot with Onions and Cilantro.

Cover Crockpot. Either cook on high for 4 hours or low for 8 hours. 1/2 way thru cooking, shred chicken using two forks and push down so covered in liquid. Keep the Cilantro to the side. After cooking is complete, remove stems and discard.

Divided Chicken mixture into 4 servings, spoon each serving into 3 tortillas. Squeeze fresh Lime Juice on top and top with either fresh Pico de Gallo or Texas Caviar.
