Ingredients

    2 tlsp olive oil
    1 onion
    1 red bell pepper
    1 green bell pepper
    jalepeno, serrano to taste
    2 zucchini
    2 yellow squash
    1 cup sliced mushrooms
    1 can diced tomatoes
    cumin, oregano, chili powder to taste
    salt and pepper to taste

Directions

Saute onion then peppers
Add diced vegetables, spices, cilantro and tomatoes
simmer until tender
