Ingredients

    2 Boneless Skinless chicken breasts
    2 tbsp whole wheat flour
    4 tbsp basalmic vinegar
    2 tbsp olive oil
    2 cups chicken broth
    salt and pepper to taste
    1 tbsp fresh or dried thyme

Directions

Place flour, salt, and pepper in a large ziptop bag. Add chicken, seal and shake until chicken is completely coated. Heat a nonstick skillet over med-high heat. Add oil to skillet. Place each piece of chicken carefully in skillet. Brown for 2 minutes on each side, turning carefully. Add basalmic vinegar and cook until reduced by one third, turning chicken once during this time. Add chicken broth and simmer until chicken is cooked through, about 10 minutes. Remove chicken and cover lightly to keep warm. Turn heat up to high and add thyme to skillet. Cook and stir until reduced by half. Serve each piece over brown rice and drizzle with sauce. Makes 2 4oz. servings.
