Ingredients

    3/4 cup light sour cream
    1/4 cup mayonnaise
    1/4 cup chopped fresh cilantro
    1-2 tablespoons cumin, (to taste)
    1 pound cod or other white fish fillets
    2 tablespoons olive oil
    2 tablespoons lime juice
    1 cup shredded cabbage
    1 small chopped tomato
    3 scallions, chopped
    1/4 of an avocado, peeled, pitted, and chopped
    1/2 small cucumber, peeled and chopped
    taco sauce or hot sauce (optional)
    salt and pepper to taste
    12 small corn tortillas

Directions

COMBINE sour cream, mayonnaise, cilantro and 1 tablespoon cumin in small bowl.
COMBINE cod, vegetable oil, lime juice and remaining cumin in medium bowl; pour into large skillet. Cook, stirring constantly, over medium-high heat for 4 to 5 minutes or until fish flakes easily when tested with fork.
FILL taco shells with fish mixture. Top with cabbage, tomato, and other vegetables as well as sour cream mixture, lime juice, and taco sauce.

Serving Size: Makes 6 servings, 2 tacos each
