Ingredients

1 CUP UNCOOKED QUINOA
2 LARGE EGGS
1 CUP CHOPPED ONION
1 CUP SHREDDED MOZZARELLA
2 TSP MINCED GARLIC
1/2 CUP FRESH BASIL OR 2 TSP DRIED BASIL
1/2 CUP CHERRY TOMATOES, DICED
1/2 TSP SALE
1 TSP PAPRIKA
1 TSP OREGANO
PIZZA SAUCE FOR DIPPING
Directions
1) place quinos and two cups of water in a covered pot. Bring to boil and simmer for 20 minutes.
2) Preheat oven to 350 degrees
3) Mix all ingredients except pizza sauce
4) Put into mini muffin tin, filling each cup up to the top, and press down to compact.
5) Bake for 15-20 minutes. Cool 10 minutes. Serve warm with sauce for dipping
