Ingredients

    4 Tbs. butter
    2 onions thinly sliced
    2 lbs of boneless chicken breast meat cut into 2" pieces
    1 2 in. piece of ginger cut into 1/2 in slices
    4 cloves of garlic
    1/2 cup of whole almonds
    12 oz plain organic greek yogurt
    1 Tbs garam masala
    1 Tbs red curry powder
    2 tsp cayenne pepper
    1 tsp tumeric
    1 tsp salt
    1 15 oz can of organic diced tomatoes
    3 Tbs chopped cilantro (optional)

Tips

Serve with 2 ice cream scoops of brown rice


Directions

Melt butter in an iron skillet and cook onions until soft and beginning to brown. Add onions to the slow cooker. Place chicken pieces on top.

Combine ginger, garlic, almonds, yogurt, garam masala, curry powder, cayenne, tumeric, and salt in a food processor and puree until smooth. Then add tomatoes and pulse a few times until blended. Pour mixture over the chicken and cook on high until bubbly then cook on low for 5 hours, or cook on low for 8 hours. Sprinkle with cilantro before serving.
