Ingredients

    2 chicken breasts, boneless, skinless
    1 chicken thigh, boneless, skinless
    3 med stalks celery, diced
    1/2 medium onion finely diced OR
    Tbls onion flakes, reconstituted
    3.4c Craisins
    4 Tblsp Light sour cream
    3/4c Duke's light mayo
    3 tblsp Tarragon, ground
    1 tsp lemon juice
    1/2 packet of Splenda
    salt & pepper to taste

Tips

To save time I just use a rotisserie chicken & remove the skin & bones. I save the legs & other thigh for a sandwich. There is never enough meat on the wings to worry with.


Directions

Shred chicken in food processor until desired cosistency & add next three ingredients. Toss to mix.
Prepare dressing by mixing mayo, sour cream, tarragon, lemon juice, Splenda, salt & pepper.
Pour dressing over chicken mixture & mix thouroughly.
Refrigerate
