Ingredients

    5 Garlic Cloves, minced
    1 tsp. Dried Parsley Flakes
    1 tsp. Pepper
    1/2 tsp. Dried Thyme Leaves
    1 Tbsp. Lime or Lemon Juice
    1 tsp. Olive Oil
    1 1lb. Pork Tenderloin

Directions

Heat Oven to 450F. Line shallow roasting pan with foil; spray foil with nonstick cooking spray. In small bowl, combine garlic, parsley, pepper, and thyme, In small cup, combine lime juice mixture.

Brush pork tenderloin with lime juice mixture, coating well. Rub garlic-pepper mixture over top and sides of tenderloin, pressing lightly, Place in sprayed foil-lined pan, garlic-pepper side up.

Bake at 450F for 25 - 35 minutes or until pork is no longer pink in center. Let stand 5 - 10 minutes before serving.

To serve, cut diagonally into 1/2 inch slices.
