Number of Servings: 10

Ingredients

    1 medium onion (or 1/2 large onion) diced
    2 jalapeno peppers diced
    2 tbs butter (can use canola oil)
    1/3 C Fenugreek (found at most Indian import shops)
    1/3 C Garam Masala (can be found in the grocery store)
    1 Tbs Chipotle pepper
    1 Tbs Cayenne pepper
    1 tsp Cumin
    1 Tbs Garlic powder
    4 C red lentils
    11 C water
    Salt to taste
    1 bunch of chopped cilantro


Tips

For a less spicy recipe reduce the amount of pepper (cayenne, chipotle, and jalapeno)


Directions

Sautee diced onion and jalapeno. Add spice to sautee. Allowing the spices to cook awaken the flavors. Add water, lentils, and salt. Bring to boil and then simmer until lentils are soft. Remove from heat, add cilantro, and rest for 5 minutes. Serve with rice or alone.

Serving Size: Makes around 10 1-cup servings
