A great, healthy alternative to "regular" Banana bread! A great, healthy alternative to "regular" Banana bread!
Number of Servings: 10

Ingredients

    1 C Organic Whole Wheat Flour
    3/4 C Unbleached White Flour
    4 Tbs Dry Cocoa Powder (Hershey's)
    2 tsp Baking Powder
    1/4 tsp Baking Soda
    3/4 tsp Salt
    2/3 C Brown Sugar
    1/3 C Applesauce (Unsweetened)
    1/2 C Egg substitute (Eggbeaters)
    1/4 C Shredded Coconut
    2 Large Bananas (Mashed)



Directions

Preheat oven to 350*.

In Small bowl, sift together dry ingredients. Set aside. In a Large bowl, cream together Bananas, Sugar, & Applesauce. Add Eggs, & Coconut. Gradually mix dry ingredients into the banana mixture.

Pour batter into a well-greased loaf pan. Bake at 350* for 45-50 minutes or until knife inserted in center comes out clean.

When cool, cut into 10 slices & enjoy!!
