Ingredients

    1 1/2 Cups - Kirkland Golden Sweet Corn with Sea Salt, Rinsed & Drained
    3 Cups Snap Peas, cut in half
    1/2 Cup - Onion, sliced Onions
    1 Cup - Stewed Tomatoes with Liquid
    1 Tbsp - Olive Oil
    1 Inch Piece/6 Tsp - Ginger Root, Grated
    1 Tsp - Cumin seed, 1 tsp (remove)
    1 Tsp - Salt
    1/8 Tsp - Cayenne Pepper

Directions

Heat oil in a pan over medium heat, add cumin seeds, heat thru for a minute. add sliced onions, saute for 2 minutes, then add the snow peas. Stir for 3 to 5 minutes. Add the rinsed and drained corn. Continue cooking for a few more minutes. Add the spices and the tomatoes. Stir well. Cover and lower heat to medium low. Cook through for 10 to 12 minutes.
Serve hot.
