Introduction

This is an easy, tasty salad served on a bed of lettuce, it makes a light meal. This is an easy, tasty salad served on a bed of lettuce, it makes a light meal.

Ingredients

    16 oz low sodium chicken broth
    1 Cup dry whole wheat couscous
    1 can chickpeas (garbonzos) drained
    1 Cup sliced scallions
    1/2 Cup sliced black olives
    1 Cup crumbled or shredded mozzarella or feta cheese
    1/2 Cup Italian vinaigrette dressing

Directions

Bring broth to a boil, stir in couscous, remove from heat and let stand for 5 minutes. Transfer to large bowl, fluff with a fork and let stand for another 5 minutes. Fluff again. Stir in garbonzos, scallions, cheese and olives. Toss with dressing and serve on a bed of lettuce.

Serving Size: Makes about 7 1-Cup servings
