Ingredients

    cover bottom of stock pot with olive oil
    2 lbs boneless chicken breast - cut up in pieces
    1 lb of whole wheat macaroni = 6 cups cooked
    carrots, celery, onion, garlic - chopped (1 cup each)
    bayleaf
    hotsauce (to your taste)
    smoked paprika or cumin
    chicken stock (about 1 cup)
    tomato sauce (1 32 oz can)
    Pour into casserole
    top with spicy pepperjack cheese (about 1 cup)
    and blue cheese crumbles
    Put under broiler until cheese is melted

Directions

The prep and cooking time are combined on top of stove, then pour into casserole and put under broiler to melt cheese for 10 minutes or until melted
