Ingredients

    2 fillets of tilapia
    1 cup sliced zucchini
    1 cup diced summer squash
    1/2 medium onion thinly sliced
    1 cup halved cherry tomatoes sliced
    Juice of 1 lemon
    1/2 tsp of oregano
    1 tsp kosher salt (divided)
    1/2 tsp fresh grounded pepper (divided)
    2 tbsp extra virgin olive oil

Tips

You can add or replace the vegetables, just use what you have in your fridge.
Serve with brown rice


Directions

1. Preheat oven to 425*
2. In a large bowl, combine tomatoes, zuchinni, summer squash, onions, 1 spoon of lemon juice, oregano, 1 tbsp of olive oil and half of the salt and pepper.
2.To make a packet, coat a piece of foil with olive oil. Place one portion of tilapia and sprinkle with some of the remaining teaspoon salt and pepper, then top with about 3/4 cup of the vegetable mixture. Fold the edges tightly but leave enough room for steam to gather and cook the food. Pinch to seal. Repeat with more foil and the remaining fish, salt, pepper and vegetables.
4. Bake the packets on an oven rack, about 20 minutes.
