    15 oz Black Beans, drained and rinsed
    3 c Cubed sweet potato cooked (skin on or off)
    1/2 c Frozen or fresh corn
    2/3 c finely chopped onion
    2 Large garlic cloves finely ninced
    1/2 c Cooked quinoa
    1/2 c Rolled oats, partially ground
    black pepper
    cayenne pepper
    chili powder


Serve with avacado, roasted pepper, chili sauce, and the cheese of your choice on the bun of your choice. Enjoy!


Roast cubed sweet potato in oven for 45-60 min. Smash with potato smasher. Prepare Quinoa as instructions call for. Smash half of beans. Dice onions finely. Grind up oats in food processor for a minute. Add whatever seasonings you want: I use cumin, onion powder, garlic powder, fresh garlic, cayanne pepper, oregeno, chili powder, salt and pepper. Mix all ingredients together in a bowl after sweet potatoes and quinoa are prepared. Pat out burgers and bake in parchment paper in the oven for 15 minutes per side.
