Introduction

Low fat pumpkin soup. Low fat pumpkin soup.

Ingredients

    Pumpkin
    Onions
    garlic
    chicken stock (3 TBS)
    water
    small amount of olive oil

Tips

I don't add salt & pepper as the chicken stock makes the soup quite salty. You could add pepper if required.


Directions

To make a large amount in a pot, chop 1 pumpkin, cut edges off & cut out seeds. Cut the garlic & onion & stir fry with about 1 tbs of olive oil. Once transparent, add the chopped pumpkin,water & chicken stock. Just cover the pumpkin with water, depending on how big yr pot is. leave to cook on a moderate heat till pumpkin cooked. Puree & leave in a container to cool. Serve with bread/buns etc.
