3 c. hash brown potatoes
1-16 oz pkg polish sausage, sliced into coins, then quartered
seasonings
12 lg eggs
1 oz milk (2 T)
3 oz Swiss cheese (to top casserole)
Tips
This recipe is incredibly flexible. If you'd like something more like breakfast, use browned breakfast sausage instead of polish sausage. Change seasonings, change cheeses. Add onions and green pepper to the hash browns and top with cheddar to make a western frittata.
Directions
Grease 9x13 glass baking dish. Preheat oven to 350F.
Brown hash brown potatoes in large skillet, salting and adding whatever seasoning is desired (1 t of Cajun seasoning or 1/2 t each garlic powder & onion powder are popular at my house), adding polish sausage when potatoes are nearly done. When hash browns and sausage are browned, spread evenly in bottom of greased casserole dish. Lightly beat eggs and milk (with some salt and/or other seasonings) in mixing bowl; pour over top of hash brown mixture. Cover tightly with foil; bake 15 minutes or until edges of eggs are set. Remove foil, top with cheese and return to oven for additional 15 minutes or until cheese is browned at edges. Let sit 5 minutes for cheese to set up, then cut into 8 equal pieces. Warms up great for lunches!
