Ingredients

10-12 ounces fresh or frozen (fully thawed) mango
2 tablespoons fresh cilantro or basil
1 medium bell pepper, chopped
1/2 cup corn (frozen canned or fresh)
3 cups cooked black beans
3 tablespoons fresh lemon juice
1 teaspoon minced fresh garlic
1 teaspoon dried oregano
1 teaspoon ground cumin
dash chili powder
9 cups chopped romaine lettuce, if you want to serve over salad
Directions
(If using fresh corn, water saute for about 5 mins or until tender.) Mix all ingredients together, and let sit at least 15 mins. Serve on top of lettuce, optional.
