This was copied from the Coles recipes web and I thought I would try it as it looked yummy and healthy. It is also done in 30 minutes for a quick meal. Ingredients

    1 Tbsp Vegetable oil (canola oil is high in Omega 3)
    400g firm fish, cubed
    500g bag frozen Thai-style stir-fry vegetables
    575g jar sweet and sour sauce
    sliced green onion and steamed rice, to serve (optional and not included in calculator)

Tips

For a crispier result, you could dust fish with a little plain flour before stir-frying.

A dash of soy sauce enhances the flavour of this dish.

If preferred, use a selection of vegetables from your fridge, or fresh vegies of your choice - carrots, zucchini, beans, baby corn, capsicum or broccolini would all work well. Stir-fry them for 2-3 minutes.


Directions

1. Heat oil in a wok or large frying pan on high. Stir-fry fish for 2-3 minutes until golden.
2. Add frozen vegetables. Stir-fry for 1-2 mins.
3. Pour in sauce and bring to the boil, stirring. Simmer for 1 min. Sprinkle with green onion and serve with steamed rice.
