Ingredients

    Sauce:
    4 tbl Olde Cape Cod Soy Sesame Ginger Dressing
    2 tbs sweeet chili sauce
    1 tbs ginger oil
    2 tbs ginger teriyaki
    2 tbs soy
    1/4 c water

    1 pkg (14 oz) of firm tofu
    1.5 tsp each ginger, coriander, basil
    2 tsp minced garlic
    1 tbs ginger oil
    1 bag Eat Smart Vegetable Stir Fry
    6 lg scallions chopped in 2" pieces
    2 c fresh snow peas
    2 c fresh bean sprouts
    2 c fresh whole green beans
    1 lg bell pepper cut into chunks
    15 med mushrooms cut into halves
    sesame seeds to sprinkle across the top

Directions

1. Mix sauce together in a bowl and set to the side
2. Heat 1 tbs of ginger oil in a skillet (I use an electric skillet)
3. Cut tofu into bite-size blocks and add to hot grease. Cook until beginning to brown and add garlic, ginger, coriander and basil. Continue cooking until tofu is a bit crunchy and browned.
4. Add Stir Fry vegetables, bell pepper, scallions, snow peas, amd green beans. Stir occasionally to make sure veggies are cooking evenly. When still firm but beginning to tender, add bean sprouts and mushrooms and cover with sauce. Put lid on pan for about 5-8 minutes until all veggies are cooked but still firm.
5. Put stir fry on plate and sprinkle with sesame seeds.

Serving Size: makes approx. 12 1-cup servings
