Ingredients

    One 2 1/2-pound boneless pork shoulder roast
    Two 16-ounce jars mild salsa
    One 19-ounce can mild red enchilada sauce

Directions

1.Unwrap the pork and remove any string surrounding it. Place it in a slow cooker, and pour the salsa and enchilada sauce on top.
2.Cook for 8 hours, turning the pork over halfway through the cooking, if possible.
3.Before serving, break the pork into 4 to 6 large chunks (it should break apart easily with a fork) and serve over rice with some of the sauce. You can also use a fork to shred the entire roast for instant pulled pork.

    Very Good
    I have 4 kids who liked it But it was a little spicy for them. My husband and I love it. I found that adding chesse and Sour cream to the top helped the spice on the kids. I used my left overs to Make Enchilidas. - 3/29/11

    Incredible!
    I loved this recipe. It was so easy to make and even my kids and my neighbor liked it. Gotta love the simple and delicious stuff. I will be making this again. I might also try it with a beef roast too just to see how it turns out. - 1/20/09
